Description
This Roasted Brussels Sprouts recipe features shaved sprouts tossed in olive oil, salt, and pepper, then roasted to perfection and finished with zesty lemon for a bright, flavorful side dish.
INGREDIENTS

Brussels Sprouts | 2 2/3 lb | shaved |
Lemon | 2 2/3 | large, zested |
Olive Oil | 2 2/3 tbsp | |
Salt | 2/3 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Spread the shaved brussels sprouts over a large baking sheet and drizzle with olive oil and sprinkle with salt & pepper.
- Roast in a 425 °F (218 °C) oven for about 20 minutes, then remove and toss, then put back in for another 15 minutes, until fairly crispy and golden on the edges.
- Remove from oven and sprinkle with lemon zest, then toss before serving.
