Description
This Broccoli Potato Soup is a creamy, nutritious blend of tender broccoli and potatoes, enhanced with garlic and onion, perfect for a comforting meal for four.
INGREDIENTS
Serves 4 people

Broccoli Crowns | 1 1/5 lb | Rough chopped |
Yellow Potatoes | 1 3/5 | medium, chopped |
Yellow Onion | 4/5 | Chopped |
Garlic | 3 1/5 clove | Minced |
Chicken Stock | 4/5 quart | |
Olive Oil | 1 3/5 tbsp | |
Salt | 2/5 tsp | or to taste |
Pepper | Several grinds |
PREPARATION
- Heat olive oil in a large saucepan and add onions and garlic. Soften for about 5 minutes over medium heat, then add chicken stock and salt & pepper.
- Add potatoes, bring to a boil, then cover and simmer for about 15 minutes, until potato pieces are tender.
- Meanwhile, steam broccoli in a steaming basket over about 2 inches of boiling water for about 5 minutes, until it's tender but not floppy. Strain and set aside.
- Combine broccoli and potatoes and liquid in a blender and puree until smooth, about 1 minute.
SUGGESTIONS
- Can be served with a hearty salad or a veggie side for a complete dinner or lunch meal.
