This baked salmon recipe features thick, juicy fillets topped with a flavorful herb butter made from fresh ingredients, offering a simple yet delicious way to enjoy high-quality fish.
INGREDIENTS

Salmon Fillets | 4 | king, coho, sockeye, or steelhead, thick cuts with skin on, as uniform as possible |
Coconut Oil | 2 tbsp | |
Italian Parsley | 1 cup | fresh, flat leaf, rough chopped |
Chives | 12 stems | |
Capers | 2 tbsp | |
Garlic | 4 clove | |
Salt | 1/2 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Make the herb butter: combine coconut oil, parsley, chives, capers, garlic and salt & pepper in cuisinart until it becomes a well incorporated, thick paste. Transfer to small bowl and set aside.
- Heat oven to 425 °F (218 °C). Lay salmon filets on nonstick pan, skin side down. Sprinkle with salt & pepper. Bake on the middle rack for about 7 minutes, until firm on the outside and still pink and fleshy in the middle.
- Remove from oven. Plate and serve promptly, with a dollop of herb butter on top.
SUGGESTIONS
- The most simple yet delectable salmon preparation, highlighting the flavor of a high quality wild fish.
- You may use a steak cut as well, however if you buy a large filet in one piece, cut into individual portions before cooking to ensure you can keep the center rare-ish without overcooking the outside.
