INGREDIENTS

PREPARATION
- Preheat oven to 325 °F (163 °C).
- Divide cauliflower head into small florets, about 1 inch each. Spread out onto a baking sheet. Drizzle with half of the olive oil.
- Spread out tomato halves onto another baking sheet and drizzle with the remaining olive oil.
- Sprinkle both trays with with salt & pepper and place in the oven for 15 minutes.
- Spiralize. Your spiralizer probably comes with several blades to interchange. Use the one with the smaller sharp triangular holes. Remove the ends of the zucchinis and one at a time, stick lengthwise onto the round, hole punch shaped piece at the top of the blade. Use the spikes of the sliding arm to secure the zucchini as you press into it and turn the handle to create ringlets of zucchini. Please a bowl under the exit side of the blade to catch the noodles.
- Toss cauliflower and tomatoes on the baking sheets and put back in the oven for another 15 minutes.
- Remove roasted vegetables from the oven and serve on top of the zucchini noodles.
SUGGESTIONS
- Spiralized zucchini is an excellent substitute for noodles. With a flavorful topping, you will not be disappointed.
