INGREDIENTS

Ground Turkey | 1 1/3 lb | |
Egg | 1 1/3 | |
Yellow Onion | 2/3 | medium, diced |
Broccolini | 2 lb | |
Garlic | 2 2/3 clove | thinly sliced |
Oregano | 1 1/3 tbsp | fresh, minced |
Ground Flax Seeds | 1/3 cup | |
Coconut Oil | 1 1/3 tbsp | |
Olive Oil | 1 1/3 tbsp | |
Salt | 2/3 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Combine turkey, egg, onion, oregano, flax and salt & pepper in a large mixing bowl and mix well.
- Scoop about 1/4 cup of mixture at a time and shape into a ball. Set aside on a plate.
- Heat coconut oil in a cast iron or a wide, heavy-bottomed saucepan and lay meatballs in hot oil. Let cook on medium for about 6 minutes, then flip and cook for another 6 minutes, until meatballs are lightly browned on both sides and cooked sufficiently around the edges as well as through the center.
- Transfer to a plate and set aside.
- In the same pan, scrape away any pieces left from the meatballs and add olive oil. Toss in garlic and brown lightly, about 2 minutes.
- Place the broccolini in the pan, covering the entire surface, so that each stem lays flat. Cook on medium for about 5 minutes, then flip each stem over so that both sides get browned and crispy.
- Transfer to a serving dish and add meatballs on top.
SUGGESTIONS
- Feel free to sub any other fresh herb in the turkey mixture: sage, thyme, tarragon.
