Description
This Tomato Basil Pistou recipe combines fresh basil, garlic, walnuts, and olive oil to create a flavorful sauce perfect for pasta, sandwiches, or as a dip. Easy to prepare and delicious!
INGREDIENTS
Serves 4 people

Garlic | 4/5 clove | |
Olive Oil | 4/45 cup | |
Parmesan | 1/5 cup | grated |
Tomato Vine | 1/15 cup | ripened, finely chopped |
Salt | 4/15 tsp | |
Walnuts | 1/15 cup | chopped |
PREPARATION
- Using a mortar and pestle, grind the salt and garlic until it becomes a paste
- Add walnuts and grind until incorporated into paste
- Add basil a bit at a time all while grinding with pestle into garlic paste
- Move paste into medium sized bowl and mash in tomatoes
- Add olive oil slowly while stirring
- Stir in cheese and serve or store in a jar in the fridge until use
SUGGESTIONS
- Pistou, or pesto has more uses than I can think of. It is wonderful as a sauce for pasta, a spread for a grilled sandwich, a dip for chips, etc…
- The mortar and pestle technique imparts a beautiful flavor to the pistou. If you don’t have one, simply use a food processor. I would pulse the ingredients to leave the pistou slightly chunky and not completely liquified.
