Description
This toasted chickpea snack is a crispy, flavorful treat seasoned with spices like coriander and cumin, perfect for a healthy and satisfying snack option that everyone will enjoy.
INGREDIENTS

Garbanzo Beans | 4/7 cup | soaked overnight and drained |
Dijon Mustard | 4/7 tsp | |
Olive Oil | 8/21 tbsp | |
Salt | 2/7 tsp |
PREPARATION
- Preheat oven to 400 °F (205°C).
- Ensure beans are as dry as possible, you can roll them between two paper towels to speed up the drying process. Add drained beans, salt, and olive oil to a large mix bowl. Mix until evenly coated. Add the beans to a baking sheet with parchment paper and place in the oven
- Mix the bean around on the sheet every 15 minutes. After 45 minutes return the beans to the mixing bowl and add the mustard, coriander, cumin, and curry and toss until evenly coated. Return to the oven for an additional 10-15 minutes
SUGGESTIONS
- Serve fresh out of the oven for a crispy and health snack.
- Play with the spice combination, add some cayenne, garam masala, or cinnamon. Not much you can do to mess this tasty treat up.
- Beans will crisp up after they come out of the oven and cool a little. They will soften after a day or two, throw them back in the oven for 5 minutes to crisp them up again.
