Description
This Sweet Potato Shepherd's Pie is a hearty and nutritious dish featuring ground turkey, vibrant vegetables, and creamy sweet potato mash, perfect for a comforting meal any day of the week.
INGREDIENTS

Arrowroot Flour/ Starch | 2 tbsp | |

Green Peas | 1/2 cup | frozen or canned |
Pepper | 1/4 tsp | |
Rosemary | 1 tbsp | chopped |
Sage | 1/2 tbsp | finely chopped |
Salt | 1 tsp | |
Sweet Potato | 1 lb | peeled and halved |
Tomato Paste | 3 tbsp | |
Ground Turkey | 1 1/2 lb | |
Worcestershire | 1/4 cup | |
Yogurt | 1/4 cup | plain |
PREPARATION
- Place peeled, chopped sweet potato in a pot of salted water and bring to a boil
- Lower heat to maintain a simmer and cook for about 15 minutes or until fork pierces through easily
- Drain potatoes and place in large bowl with yogurt and olive oil and ¼ tsp salt
- Using a hand beater, beat until ingredients are combined and smooth, set aside
- Preheat oven to 400 °F (205°C)
- Heat olive oil in cast iron skillet over medium-high heat
- Once oil is hot add onion and carrots and cook for 4 minutes
- Add garlic and stir to combine
- Add turkey and remaining salt and pepper and cook until turkey is just beginning to brown, approximately 5-6 minutes
- Sprinkle meat with the arrowroot starch and coat evenly while cooking for another minute or two.
- Add tomato paste, bone broth, worcestershire, sage and rosemary and mix everything together
- Bring to a boil, reduce heat to low and simmer for 10 minutes or until sauce thickens slightly
- Take off heat and add peas
- Spoon turkey mixture into four 9 oz ramekins, top with sweet potato mash, sealing the edges to the dish and smooth evenly with a spatula
- Bake for about 15 minutes or until mixture is bubbling around the edges
- Turn oven to broil and broil for about 3-5 minutes or until top layer is nicely browned and crispy
SUGGESTIONS
- I ate this as my main dish next to a green salad. It is extremely filling so it may be a bit much as a side.
- This shepherds pie was equally scrumptious the next day for lunch. I devoured it right out of the fridge.
