Description
This Sun Dried Tomato Spread is a flavorful blend of reconstituted sun dried tomatoes, cremini mushrooms, and garlic, perfect for enhancing sandwiches, cheese boards, or pasta dishes.
INGREDIENTS

Sun Dried Tomato | 8/15 cup | unsalted |
PREPARATION
- In a medium pan add water and bring to a low boil. Add sundried tomatoes and simmer for 5 minutes to reconstitute. Let tomatoes drain in a colander
- Place a medium pan on the stove on medium high heat. Add broth, butter, and mushrooms and cook for 5-7 minutes stirring frequently.
- Add mushrooms, tomatoes, salt, and garlic to a food processor. Begin blending the mix and add olive oil gradually until mixture is smooth. Do not over blend the mix as it should still be slightly chunky.
SUGGESTIONS
- This spread is good on everything! Serve with cheese and crackers, as a sandwich spread, or mix into sauces as a yummy addition.
- The spread can hold for a quite a while in the refrigerator, if storing for longer period add a top of olive oil in your storage jar.
