Description
This refreshing Summer Gem Lettuce Salad combines vibrant ingredients like yellow peaches, avocados, and sprouted beans, topped with soft-boiled eggs and shallot vinaigrette, perfect for a light summer meal.
INGREDIENTS
Serves 4 people

Gem Lettuce | 2 lb | leaves separated |
Yellow Peach | 2 | large, sliced |
Avocado | 2 | large, sliced |
Sprouted Beans | 1 1/2 cup | |
Egg | 4 | fresh |
Shallot Vinaigrette | 1 cup | |
Salt | 1 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- In a small saucepan, bring a few inches of water to a boil. Lower eggs in gently and soft boil for 5 - 6 minutes, depending on how runny you like them. Remove with a slotted spoon, rinse with cool water and set aside.
- Assemble gem lettuce, then peaches, avocado and sprouted beans in a large salad bowl.
- Drizzle with vinaigrette.
- Peel eggs and quarter, then place gently over the top of the salad before serving.
SUGGESTIONS
- Sprouted beans are usually sold in the refrigerated produce section of grocery stores. Usually they are packaged in a plastic container, 8 or 12 oz. I prefer the mixed variety, however feel free to use whatever kind you like best or if you’re feeling ambitious, soak and sprout your own!
