Description
This Spinach Basil Soup is a creamy and flavorful blend of fresh spinach, basil, garlic, and labne, perfect for a comforting meal. Serve it hot with bread for a delightful experience.
INGREDIENTS
Serves 4 people

Basil | 1 cup | stemmed |
Bone Broth | 4 cup | |
Butter | 4 tbsp | |
Garlic | 6 clove | finely chopped |
Labne | 1 cup | |
Russet Potato | 1 | peeled, boiled |
Salt | 1 1/2 tsp | |
Shallots | 4 | finely chopped |
Spinach | 4 head | stemmed |
White Pepper | 1/2 tsp |
PREPARATION
- In a pot of salted boiling water, blanch spinach for about 3 minutes
- Drain spinach and squeeze out excess water
- Chop spinach and set aside
- Melt the butter in large saucepan
- Add shallots and cook for 3 minutes
- Add garlic and cook for another 2 minutes
- Add bone broth and bring to a boil, cook for about 5 minutes
- Reduce heat to medium and stir in labne, cook for 3 minutes
- Add spinach and basil
- Add salt and white pepper
- Take off heat and puree soup with a hand held immersion blender or a high speed blender until smooth and velvety
SUGGESTIONS
- I added a dollop of labne to the top and sprinkled with a touch more salt and pepper
- Wonderful paired with a sandwich or a crusty piece of bread
