This Spanish Rice with Garlic Yogurt recipe features flavorful basmati rice complemented by a creamy garlic yogurt topping, making it a delicious and versatile side dish for any meal.

Rock Salt | 4/5 tsp | |
Yogurt | 1 1/5 cup |
PREPARATION
- Mix yogurt, garlic, and rock salt and set aside as a topping for the rice.
- Take the basmati rice and add it to a pan. Place the pan on the stove at med high heat constantly stirring rice until light brown. Once browned, remove from heat.
- Add onions, cumin, cayenne, salt, and butter to a large pot. Place the pot on medium heat until onions are soft and caramelized.
- Add the broth and tomato paste into the pot and mix gently until tomato paste is dissolved into the liquid.
- Add the rice, fresh tomato, and olive oil to the pot and bring to a simmer. Reduce to medium heat until cooked, about 7-9 minutes.
- Serve rice and top with garlic yogurt one plated.
SUGGESTIONS
- This side goes great with almost any meat you can think of
- The garlic yogurt will get stronger as it rests, so add a little more yogurt and salt if the flavor becomes too strong. Or maybe you like it that way.
