Description
This Spaghetti Squash Lasagna is a healthy, delicious twist on traditional lasagna, using roasted spaghetti squash, seasoned ground turkey, and topped with melted parmesan cheese for a comforting meal.
INGREDIENTS
Serves 4 people

Cumin | 1/2 tsp | |

Ground Turkey | 1 lb | sauteed |
Paprika | 1 tsp | |
Parmesan | 1/2 cup | shredded |
Pasta Sauce | 16 oz | jarred |
Pepper | 1/2 tsp | |
Salt | 1/2 tsp | |
Spaghetti Squash | 1 | cut in half, roasted |
PREPARATION
- Cut spaghetti squash in half and roast face down in 400 °F (205°C) oven for 45 minutes to an hour
- While squash is roasting, saute ground turkey in olive oil with minced garlic, salt, pepper, cumin and paprika
- Once spaghetti squash is done and cooled, scoop out flesh and place in a large bowl with sauce and ground turkey and mix until just combined
- Place this mix back in shell, top with parmesan cheese and bake on 350 °F ( 177 °C) for 10 minutes
- Broil for another 3 minutes until cheese is slightly browned and crispy
SUGGESTIONS
- I enjoyed eating this with a caesar salad and a nice glass of cabernet sauvignon
