Description
Soup a Pistou is a flavorful, hearty soup made with fresh vegetables and aromatic herbs, perfect for a comforting meal. Serve it warm with crusty bread for a delightful experience.
INGREDIENTS
Serves 4 people

Bay Leaf | 1 1/3 leaves | |
Bone Broth | 5 1/3 cup | |
Carrot | 1 1/3 | whole, chopped |
Garlic | 4 clove | |
Leeks | 1 1/3 | cleaned, sliced and dark green part discarded |
Olive Oil | 2 tbsp | |
White Onion | 2/3 | finely chopped |
Salt | 2/3 tbsp | |
Thyme | 1 1/3 tsp | chopped |
Zucchini | 1 1/3 | whole, chopped |
PREPARATION
- In a dutch oven, heat olive oil
- Add the onions and leeks and cook for a few minutes until translucent
- Add the thyme, zucchini, carrots, garlic, salt and pepper and cook for 3-4 minutes.
- Add bone broth, bring to a boil and add bay leaf.
- Lower soup to simmer and cook for 20-25 minutes or until vegetables are tender but not mushy.
- Take off heat and add a tbsp or two of pistou to each bowl of soup
