Description
This Smoked Trout Spinach Salad combines fresh spinach, radicchio, creamy avocado, and sweet figs, topped with crumbled smoked trout and a tangy shallot vinaigrette for a delightful and nutritious meal.

PREPARATION
- Fill a large salad bowl with the spinach.
- Remove the first inch or so from the bottom of the radicchio heads, then slice into 1/8 inch thick strips, from end to end, and sprinkle on top of the spinach.
- Cube avocado into 1/2 inch pieces and distribute evenly on top.
- Remove the ends of the figs and then quarter and distribute evenly on top.
- Crumble the smoked trout into 1 inch pieces and distribute evenly on top.
- Drizzle with vinaigrette and serve immediately.
