This Shallot Vinaigrette is a bright and versatile dressing made with shallots, Dijon mustard, and champagne vinegar, perfect for enhancing salads and vegetables, and can be stored for weeks.

PREPARATION
- Combine all ingredients in a small glass jar with tight fitting lid.
- Mix well by shaking the jar for at least a minute.
