This Roasted Spicy Carrots & Parsnips recipe features tender vegetables seasoned with smoked paprika and olive oil, creating a flavorful and healthy side dish perfect for any meal.
INGREDIENTS

Carrot | 3 1/5 | large, 1 inch diagonal slices |
Parsnip | 1 3/5 | large, 1 inch diagonal slices |
Olive Oil | 1 3/5 tbsp | |
Smoked Paprika | 4/5 tsp | |
Salt | 2/5 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Toss carrots and parsnips with salt & pepper, smoked paprika and olive oil in a large mixing bowl.
- Arrange on a baking sheet so there is enough room for slices to lay relatively flat.
- Roast in a 425 °F (218 °C) oven for about 20 minutes, then remove and toss.
- Pop back in the oven for another 20 minutes, until carrots and parsnips have golden brown edges and are tender all the way through.
- Remove from oven and serve.
