This roasted red cabbage recipe features tender, caramelized wedges seasoned with olive oil and salt, creating a delicious and healthy side dish that's perfect for any meal.

PREPARATION
Preheat the oven to 450°F (232 °C).
Cut the cabbage in half through the core and remove the outer leaves. Keeping the core intact, slice into wedges of about 1” thickness at the widest point. Lay on a sheet tray, drizzle with the olive oil and salt. Flip to coat the other side.
Cook for 25 minutes.
Remove to flip each cabbage wedge halfway through. This will get the nice char on both sides. Remove, sprinkle with a bit of sea salt if you like and serve up! If I’m serving with fish I will often squeeze a bit of lemon juice over the top as well.
