Description
This Red Bean Nut Dip is a creamy and nutritious blend of beans and nuts, enhanced with garlic and olive oil, perfect for serving with plantain chips or as a spread.
INGREDIENTS
Serves 4 people

Red Beans | 1/3 cup | soaked overnight and cooked |
Walnuts | 1/6 cup | soaked overnight |
Pecans | 1/6 cup | soaked overnight |
Garlic | 2 2/3 clove | |
Olive Oil | 1 1/3 tbsp | |
Salt | ||
Pepper |
PREPARATION
1. Brown the garlic cloves in a pan with olive oil.
2. Set aside and let cool.
3. In a food processor, combine beans, nuts, garlic, salt & pepper and remaining olive oil. Puree for a couple of minutes until smooth.
Makes for a hearty dip that pairs well with plantain chips.
