Description
These quinoa cakes are a delicious and nutritious option, combining beans, olives, and spices, then pan-fried to golden perfection, topped with fresh avocado for a delightful meal.
INGREDIENTS

Avocado | 1 1/3 | pitted, sliced into thin strips |
Bread Crumbs | 1/3 cup | gluten free |
Egg | 2/3 | |
Frying Oil | ||
Garlic | 2 clove | |
Great Northwestern Beans | 2/3 can | drained |
Kalamata Olives | 9 1/3 | pitted, small chop |
Olive Oil | 1 tbsp | |
Red Onion | 1/6 cup | small chop |
Pepper | 2/3 tsp | |
Quinoa | 1 1/6 cup | cooked |
Salt | 1 tsp |
PREPARATION
- Place beans and garlic into a food processor with olive oil and blend until mostly smooth. Small chunks of beans are desirable.
- Place bean mix into a large mix bowl. Add bread crumbs, egg, olives, chopped onion, pepper, salt, and quinoa and mix thoroughly.
- Form mix into circular 3 inch patties.
- Heat a pan on medium high heat and add frying oil, when oil is hot, add patties and cook for 3-4 minutes on each side. Patties should be a golden brown.
- Top patties with avocado slices and serve
SUGGESTIONS
- Add some labne to turn this into a decadent meal
- You can also omit the olives and make the patties larger to use this as a veggie burger
