Description
This Pomegranate Chicken Drumsticks recipe features tender chicken glazed with a sweet and tangy pomegranate syrup, enhanced with garlic and rosemary, perfect for a flavorful and satisfying meal.

PREPARATION
- Add pomegranate juice, garlic, lemon juice, molasses, and rosemary leaves to a small stock pot. Bring to a light simmer then reduce to a medium low heat leaving the lid off the pot. Reduce the syrup until it equals about 2/3 of a cup. Set aside 2 oz of the syrup for a final brushing for the chicken before serving. Let the syrup cool to thicken.
- Preheat your oven to 425 °F (218 °C). Sprinkle the chicken with salt and pepper and place and a baking sheet. Brush the chicken with the syrup and place into the oven. Brush the chicken with additional syrup every 5 minutes cooking a total time of 25-30 minutes. Check your chicken with a thermometer to ensure it is cooked all the way through.
- After the chicken has cooked remove from the oven and brush with the 2 oz of syrup set aside. Use a clean brush to avoid cross contamination of raw chicken.
SUGGESTIONS
- Use any cut of chicken you like in place of the drumsticks, just be sure to adjust your cooking time to keep that chicken juicy.
- You can also use this syrup to pan fry smaller pieces of chicken with vegetables to make a middle eastern style stir fry
