This Pickled Tuna Salad combines fresh ingredients like red bell pepper and red onion with a tangy dressing, creating a delicious and versatile dish perfect for sandwiches, salads, or appetizers.
INGREDIENTS

Dijon Mustard | 1 1/3 tbsp | |
Lemon Juice | 1 1/3 tsp | |
Olive Oil | 1/3 cup | |
Pepper | 1/3 tsp | |
Red Bell Pepper | 1 1/3 | medium, peeled, finely chopped |
Red Onion | 1/3 | small, peeled, soaked in cold water, finely diced |
Salt | 1 tsp | |
Tuna | 2 2/3 can | drained |
PREPARATION
- In a medium bowl, break up tuna with a fork
- Add bell pepper and onion and mix together
- Add mustard, olive oil, salt, pepper and paprika and mix to combine
- Drizzle lemon juice on and gently mix
SUGGESTIONS
- Enjoy this as healthier spin on a tuna sandwich
- Put tuna on top of your favorite green salad
- Enjoy as an appetizer on top of crackers or crostini
- OR if you are feeling naughty, do what I did growing up; throw it in with some macaroni and cheese. ;)
