Description
This pesto recipe combines fresh basil, garlic, and olive oil for a vibrant sauce that enhances vegetables, meats, and pasta dishes, perfect for any season and easy to store.
INGREDIENTS
Serves 4 people

Basil | 4/7 bunch | large, stems removed |
Garlic | 3 3/7 clove | |
Anchovies | 4/7 tin | in oil |
Nuts | 2/7 cup | optional, cashews, pine nuts, brazil nuts, or almonds |
Olive Oil | 2/7 cup | |
Lemon | 4/7 | large, juice only |
Salt | 4/7 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Combine all ingredients in food processor or blender and puree until smooth, about 2 minutes, stopping occasionally to scrape edges.
- Store in a sealed container, preferably glass, in the fridge for up to a week. You may also freeze for months at a time, placing in the fridge to defrost a day before use.
SUGGESTIONS
- Adds brightness to vegetables, meat or seafood.
- Add a dollop here and there or prepare for a pesto-focused dish like Zucchini Noodles, (recipe can be found here).
- Stock the freezer for fall and winter months, when fresh basil is not as abundant and you’re craving the flavors of spring and summer.
