Description
Peasant's Stew is a hearty, flavorful dish featuring ground lamb, chickpeas, and a blend of spices, perfect for a comforting meal. Ideal for freezing and reheating on busy nights.

Chickpeas | 6/7 cup | dried, soaked overnight and drained |
Coriander | 1 1/7 tsp | |

Curry | 4/7 tbsp | |
Garlic | 2 2/7 clove | finely chopped |
Ground Lamb | 4/7 lb | |
Okra | 6/7 cup | cut into ½ inch slices |
Onion Powder | 6/7 tsp | |
Yellow Onion | 2/7 | diced |
Green Peas | 3/7 cup | |
Potato | 6/7 lb | skinned and cut into ¾ inch cubes |
Salt | 5/7 tsp | |
Tomato | 5/7 cup | chopped |
Tomato Paste | 1 1/7 tbsp |
PREPARATION
- Add tomato paste, bone broth, and all spices into a pot and bring to a low simmer and whisk together. Let simmer for 5 minutes.
- Take 1 tbsp of butter and chopped onion and sauté on medium heat until onion becomes clear. Add ground lamb and cook until browned.
- Add bone broth, onion, chickpeas, potato, garlic, tomato, and salt to a slow cooker and stir all ingredients together. Set slow cooker to cook on high for 4 hours.
- After 3 hours have elapsed, add in okra, lamb, and peas and stir to mix evenly. Continue cooking for the final hour.
SUGGESTIONS
- Freeze and reheat prepared stew for nights you don’t want to cook.
- Top with yogurt or labne to give it a creamy flavor.
