This Paleo Trail Mix is a delicious blend of nuts, seeds, and dried fruits, perfect for a healthy snack. It's easy to prepare and can be stored for weeks.

Dried Cranberry | 2/5 cup | or cherries, or blueberries, more to taste |
Sea Salt | 2/5 | huge pinch |
Cinnamon | 3/5 tbsp | |
Maple Syrup | 1/10 cup | |
Vanilla Extract | 2/5 tbsp | almond extract |
Ghee | 4/5 tbsp | or coconut oil, or butter |
Lemon Zest | 4/5 tbsp | |
Lemon Juice | 2 tbsp |
PREPARATION
- Preheat oven to 325 °F (163 °C) line a couple baking sheet with parchment.
- Using clean hands, toss all nuts, coconut flakes, cranberries, salt & cinnamon in large bowl until well-mixed.
- Add maple syrup, vanilla & melted ghee and stir.
- Spread in an even, single layer (not overlapping) on baking sheet and toast for 10-15 minutes, until cranberries are plumped up.
- Let cool for 5 minutes, then toss with lemon juice & zest. Keep in airtight container for up to 3 weeks.
