INGREDIENTS

Egg | 1/3 | |
Dijon Mustard | 1/3 tsp | |
Lemon | 2/3 | juice only |
Olive Oil | 1/3 cup | |
Salt | 1/6 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- In a blender or food processor, combine egg, mustard, lemon juice and salt & pepper and mix well.
- Very slowly, in a small trickle while blades are turning, add olive oil. This process should take at least a minute to completely incorporate.
- Store in a clean sealed jar in the fridge. Mayonnaise should last up to a couple weeks if kept clean by not contaminating with dirty utensils.
SUGGESTIONS
- The flavor of this mayonnaise is much stronger than your typical condiment because of the olive oil base.
- If you like garlic, feel free to add a couple fresh cloves in the beginning to create more of an aoli.
