This millet porridge recipe offers a warm and nourishing breakfast, featuring toasted millet, sweet apples, and aromatic spices, topped with honey and a variety of delicious toppings.

PREPARATION
Lightly toast the millet.
Place it in the pot dry, and toast over low heat for 2-3 minutes until a faint aroma is released. Then add the water, grated apple, all of the spices and the salt.
Bring to a low boil.
Turn down, cover and simmer for 25 minutes, stirring every five minutes. Halfway through add the apple. Once all of the liquid is absorbed, turn off and let rest, covered, for a few minutes before eating.
Add the toppings...
A drizzle of honey, a scoop of yogurt, berries, peaches, almonds, you name it. For re-heating the next day, put a few tablespoons of water in the bottom of the pot and add the leftover porridge right in there. Stir well and cook until combined and hot.
