Description
This Mediterranean Slow Cooker Chicken Curry is a flavorful and aromatic dish, combining tender chicken with spices, tomatoes, and labne, perfect for a comforting meal served with rice.
INGREDIENTS

Chicken Breast | 1 1/3 lb | boneless, skinless and cut in half |
Cilantro | 1 1/3 tbsp | chopped |
Coriander | 1 tsp | |
Cumin | 2/3 tsp | |
Curry Powder | 1 tbsp | |
Garlic | 2 2/3 clove | finely chopped |
Ginger | 2/3 tbsp | minced |
Labne | 2/3 cup | |
Lime Juice | 2/3 tbsp | |
Olive Oil | 1/3 cup | |
Green Onion | 2 tbsp | finely chopped, for garnish |
White Onion | 2/3 | large, chopped |
Salt | 1/3 tsp | |
Tomato | 8 oz | crushed |
Turmeric | 2/3 tsp |
PREPARATION
- Set your crock pot to medium heat and heat olive oil and all spices except salt and pepper, for a few minutes to infuse the oil and gently roast spices.
- Add crushed tomatoes, ginger, garlic, salt and pepper and mix to combine.
- Add all other ingredients: chicken, broth, chopped white onion, labne and lime (set aside green onion for garnish)
- Mix everything together thoroughly and cover.
- Lower heat to low and allow to cook for about about 8 hours.
- Once cooked, use a fork to separate the tender chicken into bit sized pieces.
SUGGESTIONS
- Curry isn’t quite the same if it isn’t served with rice. The way it soaks up the broth can’t be beat. I love basmati.
- Garnish with finely chopped green onion and/or cilantro or parsley
