Description
This Mediterranean Fried Rice combines basmati rice with flavorful spices, ground lamb, and fresh vegetables, creating a deliciously satisfying dish perfect for any meal of the day.
INGREDIENTS

Basmati Rice | 2 2/7 cup | cooked, day or two old |
Cayenne | dash | |
Cumin | 1 5/7 tsp | |
Egg | 1 1/7 | beaten |
Garlic | 2 6/7 clove | finely chopped |
Garlic Powder | 1 1/7 tsp | |
Green Cabbage | 1 5/7 cup | shredded |
Ground Lamb | 6 6/7 oz | |
Leeks | 1 1/7 | whites, chopped |
Nutmeg | dash | |
Pepper | to taste | |
Shallots | 1/7 cup | finely chopped |
Smoked Paprika | 1 5/7 tsp | |
Zucchini | 4/7 | chopped |
PREPARATION
- Heat olive oil in a cast iron skillet or wok on medium heat
- Add ground lamb to skillet with salt and cook for 8-10 minutes or until nicely browned
- Remove lamb from skillet and set aside
- Add a bit more oil to skillet if needed and saute the leeks with the remaining spices for about 5 minutes or until very fragrant
- Add garlic, shallots, cabbage and zucchini and saute for another 5 minutes or so
- Add beaten eggs to skillet and coat vegetables evenly; cook for 2 minutes
- Add day old rice and cook all together for another minute or two
- Take off heat and enjoy
SUGGESTIONS
- I enjoyed this for breakfast, lunch, dinner and snack ;)
- I love mine drizzled with coconut aminos, soy sauce works well too
- For a little more heat, mix with a bit of sriracha
