Description
These Maple Thyme Acorn Squash Slices are a delicious and healthy side dish, featuring tender, roasted squash drizzled with maple syrup and seasoned with nutmeg and fresh thyme.
INGREDIENTS
Serves 4 people

Acorn Squash | 1 | medium, halved, deseeded, cut into ½ in slices |
Maple Syrup | 2 tbsp | |
Nutmeg | 1/4 tsp | freshly grated |
Olive Oil | 2 tbsp | |
Pepper | 1/4 tsp | |
Salt | 1/2 tsp | |
Thyme | 4 sprig | fresh, destemmed, chopped |
PREPARATION
- Preheat oven to 425 °F (218 °C)
- Toss acorn squash slices with all other ingredients and place on a parchment lined baking sheet
- Place in oven and bake for 30 minutes
- Flip slices and bake for another 15 minutes or until looking evenly browned on the edges
SUGGESTIONS
- You may eat the skin of the squash. It is filled with phytonutrients and fiber!
