Description
This Maple Bacon Meatloaf combines savory ground beef, fresh vegetables, and crispy bacon, all enhanced with a touch of maple syrup for a deliciously unique twist on a classic comfort food dish.

Spinach | 4/7 package | 16oz package, frozen spinach, thawed and thoroughly drained |

Rosemary | 1 5/7 sprig | finely minced |
Zucchini | 2/7 cup | optional, shredded |
Sweet Potato | 2/7 cup | or parsnips, shredded |
Tamari | 1 1/7 tbsp | |

Coconut Flour | 1 1/7 tbsp | or substitute with oat flour and double the measurements |

PREPARATION
- Preheat oven to 375 °F (190 °C) line a baking sheet with parchment paper. Parcook bacon for 10 minutes and set aside.
- In a large skillet over high heat, sautee the onion in your fat of choice. Season liberally with salt. Allow onion to brown slightly, then turn down the heat and let soften for several minutes. Add tomato paste and allow to brown slightly. Add the garlic & mushrooms. Season with salt again. Allow to sautee until mushrooms are fully cooked and there are some nice brown bits on the bottom of the pan.
- Deglaze the pan with red wine. Then remove the onion-mushroom mixture to a large bowl.
- In the same large bowl, add the carrot, celery, thawed & drained spinach, parsley, rosemary, zucchini & sweet potato/ parsnips. Add more salt. Mix thoroughly.
- Add tamari, eggs, coconut flour and mix again. Season with pepper. Add beef and use your hands to gently mix everything together without overworking the meat. There will be more veggies than meat! Take a few tablespoons of the mixture and cook it in skillet so you can taste it and adjust seasoning if necessary.
- Shape the meat into a free form loaf on sheet pan and top with slices of bacon. Drizzle maple syrup on top.
- Bake at 375 °F (190 °C) for one hour, or until the beef springs back to the touch. Let rest for 20 minutes before slicing.
