This Mango Jalapeno Slaw is a vibrant, refreshing dish that combines crunchy cabbages with sweet mango and spicy jalapeño, dressed with a zesty vinaigrette for a perfect balance of flavors.
INGREDIENTS

Green Cabbage | 2/3 head | |
Purple Cabbage | 2/3 head | |
Mango | 2/3 | soft, ripe, precut is fine as long as it's refrigerated, not jarred |
Jalapeño | 2/3 | or more to taste |
Macadamia Oil | 1/3 cup | avocada, or olive oil work |
Rice Vinegar | 1 1/3 tbsp | or coconut vinegar |
Honey | 2/3 tbsp | |
Lime Juice | 1 1/3 tbsp | |
Lemon Zest | 1 1/3 tbsp | |
Fish Sauce | 2/3 splash | optional |
Smoked Paprika | 2/3 tsp | |
Salt | 2/3 pinch | big pinch |
PREPARATION
- Cut each cabbage in half, and cut out the thick core. Slice into thin strips and toss in big bowl
- Cut mango into a small dice.
- Halve the jalapeno, remove the seeds, and dice into tiny pieces.
- Toss all ingredients together.
- In a jar, add all vinaigrette ingredients & shake until emulsified. Taste test. Is it balanced? Add a bit of each ingredient until it tastes perfect.
