This lentil recipe offers a simple and nutritious way to prepare lentils, perfect for various dishes. It includes soaking, cooking, and seasoning instructions to enhance flavor and texture.
INGREDIENTS
Serves 4 people

Dried Lentils | 1 1/7 cup | red, yellow, brown, green, black, puy, beluga or machiados variety |
Salt | 1 1/7 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Soak for 8 hours or overnight in 4X amount of water.
- Drain and rinse thoroughly.
- Add lentils and 2X amount of water, (this will probably be about 6 cups after soaking), to a large covered pot.
- Bring to a boil, reduce the heat to low, then cover and simmer until lentils are tender but not mushy.
- Check occasionally to ensure they are submerged in liquid. If the lentils become exposed, simply add hot water to the pot and cover again.
- Cooking time takes 20 to 30 minutes, depending on the lentil variety.
- Remove from liquid and season with salt & pepper.
SUGGESTIONS
- Soaking is not necessary but reduces cooking time.
- Making them simply and without added spices lets you transform them into many different types of dishes after cooking, including salads, soups and burgers.
