This Kimchi Fried "Rice" recipe combines flavorful ingredients like kimchi, riced cauliflower, and fresh vegetables, creating a delicious and healthy dish that's perfect for any meal.
INGREDIENTS

Butter | 8 oz | or duck fat, or bacon fat |
Kimchi | 2 cup | |
Tamari | 2 splash | |
Scallions | 6 | sliced on diagonal |
Cauliflower | 4 head | riced in a food processor or with a grater |
Salt | ||
Carrot | 1 cup | shredded |
Sugar Snap Peas | 1 cup | chopped |
Broccolini | 1 cup | chopped |
Tamari | 2 tbsp | |
Fish Sauce | 2 tsp | |
Lime Juice | 4 tbsp | |
Egg | 4 | fried or poached |
PREPARATION
- In a large skillet, melt butter/fat on medium heat. Add kimchi and sautee for minutes. This mellows out the kimchi and creates a delicious sauce. Yes it’s a lot of fat! The cauliflower needs it.
- Turn the heat up to high to and add a splash of tamari to caramelize the kimchi, then add scallions and sautee for seconds. Add riced cauliflower to skillet and salt generously. Stir quickly to coat the cauliflower in the sauce, then leave it alone to brown for a couple minutes.
- Add carrot, snap peas, broccolini, tamari & fish sauce, and stir for seconds. You want the veggies to just be kissed by heat so they’re still crisp-tender and brightly colored.
- Remove from heat, serve with lime, eggs & cilantro.
