This Kale & White Bean Soup is a hearty, nutritious dish featuring tender kale and creamy beans, perfect for a comforting meal that’s easy to prepare and full of flavor.
INGREDIENTS
Serves 4 people

Lacinato Kale | 4/5 bunch | stems removed and roughly chopped |
Beans | 4/5 can | cannelini, great northern or navy beans |
Celery | 3 1/5 stalk | chopped |
Carrot | 3 1/5 | chopped |
Yellow Onion | 4/5 | medium, diced |
Chicken Stock | 4/5 quart | |
Olive Oil | 1 3/5 tbsp | |
Salt | 2/5 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Heat olive oil in a large sauce pan and add onion. Cook on medium for about 2 minutes, then add carrots and celery and cook another 6 minutes, until softened.
- Season with salt & pepper, then add stock and bring to a simmer.
- Throw in beans and kale. Stir gently until beans get warm and kale wilts.
- Serve!
SUGGESTIONS
- You can make ahead of time and keep in fridge for up to a week or freeze for months.
- Add some heat with dried chili flakes or chili-based hot sauce.
