This vibrant kale salad features caramelized onions, creamy goat cheese, and ripe avocado, all tossed in a zesty dressing, making it a delicious and nutritious addition to any meal.
INGREDIENTS
Serves 4 people

Green Kale | 1 bunch | stems removed and torn into medium pieces |
Red Onion | 1 | large, sliced in thin rounds |
Avocado | 1 | cubed |
Goat Cheese | 2 oz | crumbled |
Almonds | 4 tbsp | slivered |
Lemon Juice | 5 tbsp | 2.5 tbsp is about 1 lemon |
Tarragon | 1 tbsp | fresh, chopped |
Whole Grain Mustard | 1 tbsp | |
Granulated Garlic | 1 tsp | |
Olive Oil | 1/4 cup | |
Salt | ||
Pepper |
PREPARATION
- In the bottom of a large salad bowl, combine olive oil, mustard, granulated garlic and salt & pepper.
- Blend well.
- Add lemon juice and continue stirring.
- Add kale to the bowl and start tossing, making sure all leaves are covered in dressing.
- Arrange avocado, goat cheese and almonds on top and serve.
