Description
This Grilled Sardines with Herb Salsa recipe features fresh sardines complemented by a vibrant herb salsa, perfect for a light meal paired with crusty bread and a glass of wine.
INGREDIENTS
Serves 4 people

Olive Oil | 1 tbsp | |
Parsley | 2 tbsp | coarsely chopped |
Parsnip | 1 1/4 lb | chopped into 1 inch cubes |
Radicchio | 1 | large head, chopped into 10 wedges |
Salt | 1/4 cup | |
Sardines | 8 | scaled, gutted |
Lemon Juice | 4 tbsp | |
Olive Oil | 8 tbsp | |
Parsley | 1 cup | chopped |
Red Onion | 1 | small, minced |
Salt | 1 tsp | |
Tarragon | 4 tbsp | chopped |
PREPARATION
Sardines:
- Wash sardines thoroughly, inside and out
- Pat dry with paper towel and rub inside and out with salt
- Cover and put in a cool place for 45 minutes
Herb Salsa:
- Using a mortar and pestle grind the salt.
- Once salt is finely ground add all ingredients but the olive oil, one ingredient at a time while grinding with pestle
- Once all ingredients are combined, add in olive oil slowly until you have an emulsion
SUGGESTIONS
- Apply salsa generously to sardines and enjoy with a nice crusty baguette
- Pairs well with sauvignon blanc
