This Green Cabbage Salad with Lemon Vinaigrette is a refreshing and vibrant dish, combining crunchy cabbage, tangy olives, and a zesty dressing, perfect as a side or light meal.
INGREDIENTS
Serves 4 people

Green Cabbage | 1 | medium head, destemmed, cut into very thin strips |
Garlic | 1 clove | minced |
Lemon Juice | 2 tbsp | |
Lemon Zest | 1/2 tsp | |
Kalamata Olives | 3/4 cup | halved |
Olive Oil | 1/3 cup | |
Parsley | 3/4 cup | flat leaf, minced |
Salt | 1/2 tsp | |
Shallots | 1 tsp | minced |
PREPARATION
- in a large bowl, mix shredded cabbage with kalamata olives
- in a small bowl, whisk the olive oil, lemon juice and zest, garlic, shallot, parsley and salt together until emulsified
- Pour vinaigrette over cabbage and olives and serve
Suggestion
SUGGESTIONS
- I sprinkle a little extra parsley on top to amp up the herb flavor and Garnish the dish nicely
- A beautiful side with chicken or fish. This dish is incredibly flavorful so it mixes well with something that hasn’t been overly seasoned.
