Cayenne | dash | |
Dover Sole | 2 lb | small pieces |
Frying Oil | sunflower | |
Garlic Powder | 1 tsp | |
Paprika | 1/4 tsp | |
Salt | 1/4 tsp | |

White Rice Flour | 1 cup |
PREPARATION
- Add all dry ingredients to a shallow flat dish
- Place sole on a paper towel drying each side of the fish
- Dip sole into flour mixture, applying flour liberally.
- Bring oil to 375 °F (190 °C) in a large pan.
- Lightly shake flour from fish and place into oil. Flip fish once it reaches a golden brown color, flipping again once other side has reached golden brown color. Cook an additional 2-5 minutes or until fish reaches crispy texture.
- Place cooked fish on a cooling rack or paper towel to allow oil to drain.
SUGGESTIONS
- Serve with lemon and your favorite condiment. I personally like a 50-50 mix of veganase and ketchup
- Make extra for leftovers. The fish will stay crispy and tasty the next day.
- If you oil starts to burn, dump it and start fresh. With proper temperature control you should be able to make it through a batch. If making more than one batch you may need to change out your oil.
