Description
This Gluten Free Manchego Herb Bread is a savory delight, featuring a blend of fresh herbs and rich Manchego cheese, perfect for a delicious snack or a hearty breakfast option.
INGREDIENTS
Serves 4 people

Baking Powder | 2/3 tsp | |
Buckwheat Flour | 1/3 cup | |
Dill | 1/12 cup | finely chopped |
Egg | 1 | beaten |
Garbanzo Flour | 1/6 cup | |
Green Onion | 1 stalk | finely chopped |
Olive Oil | 1 tbsp | |
Parsley | 1/9 bunch | finely chopped |
Manchego Cheese | 5/12 cup | grated |
Salt | 1/3 tsp | |
Sweet White Rice Flour | 1/4 cup |
PREPARATION
- Preheat oven to 375 °F (190 °C)
- Throw eggs in a bowl and using either a fork or an electric beater, beat until nice and frothy.
- Add in herbs, onions, oil and salt and mix together well using a stand mixer or electric hand mixer. If you don’t have either, you may use your hand and a whisk, you will just have to use a little extra elbow grease :)
- Add in flour and baking powder and mix again until incorporated
- Add in cheese and mix until just combined.
- Pour batter into a greased loaf pan and bake for 45 minutes.
- Take bread out of pan and place on a wire rack to cool
- Slice and savor.
SUGGESTIONS
- Since this recipe is gluten free you don’t have to worry about over mixing! You want to avoid over mixing wheat flour as it activates the gluten and can make your finished product firm, not fluffy and moist like you’d want.
- Equally delicious eaten hot or at room temperature. I wasn’t too fond however of this bread cold right out of the fridge.
- I ate this on its own as a snack and also as breakfast with a fried egg on top
