This Garbanzo Bean Salad is a refreshing and nutritious dish combining chickpeas, fresh vegetables, and a tangy dressing. It's perfect as a side or light meal for any occasion.
INGREDIENTS
Serves 4 people

Garbanzo Beans | 2 can | drained |
Cucumber | 1 | peeled and diced |
Yellow Bell Pepper | 2 | diced |
Red Onion | 1 | small, diced |
Olive Oil | 4 tbsp | |
Lemon | 2 | small, juice only |
Salt | 1 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Combine garbanzo beans and diced cucumber, bell pepper and onion in a serving bowl.
- Drizzle with olive oil, squeeze lemon juice on top and sprinkle with salt & pepper.
- Toss gently and serve.
SUGGESTIONS
- Again, feel free to add other types of veggies to this side dish. Thinly sliced red cabbage is always a favorite.
