Description
This refreshing Cucumber Tomato Salad features vibrant cherry tomatoes and cucumbers, complemented by a creamy yogurt herb dressing, making it a perfect side dish for any meal.
INGREDIENTS
Serves 4 people

Cherry Tomato | 2 basket | halved |
Cucumber | 2 | peeled |
Greek Yogurt | 2/3 cup | plain, nonfat |
Chives | 4 stems | |
Dill | 4 tbsp | chopped |
Garlic | 4 clove | |
Lemon | 2 | small, juice only |
Salt | 1 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Combine in blender: yogurt, chives, dill, lemon juice, garlic and salt & pepper. Blend until smooth and well incorporated.
- Slice cucumbers in quarters, lengthwise, then slice from end to end.
- Combine cucumbers and tomatoes in a serving bowl, pour dressing over top and toss gently.
SUGGESTIONS
- Feel free to add other types of veggies to this side dish. I like the colorful combination of thinly sliced red cabbage and diced yellow bell pepper.
- Dressing can be made in advance and stored in a sealed container in the fridge for about a week.
