Description
This creamy tomato basil soup combines fresh tomatoes, garlic, and herbs, creating a comforting dish perfect for chilly days. Serve it with grilled cheese for a delightful meal.
INGREDIENTS

Bone Broth | 2/3 cup | |
Cauliflower | 2/3 | small head |
Garlic | 5 1/3 clove | finely chopped |
Labne | 1/3 cup | |
Olive Oil | 1/6 cup | |
Parsley | 1/6 cup | chopped |
Pepper | to taste | |
Salt | 1/2 tsp | |
Sherry | 2/3 cup | |
Tomato | 1 1/3 lb | chopped |
Yellow Onion | 2/3 | large, chopped |
PREPARATION
- Heat olive oil in a dutch oven or stockpot on medium heat
- Add onions and garlic and cook for a few minutes, until onions are translucent and garlic is fragrant
- Add tomatoes and cauliflower and cook for a few more minutes
- Add bone broth and bay leaves and bring to a boil
- Reduce heat to low and let simmer for 15-20 minutes or until cauliflower is soft enough to pierce through
- Take off heat and add labne, basil and parsley and using an immersion blender puree soup until smooth and creamy
- Add sherry and salt and stir well to combine, taste and add more salt if desired
- Grind fresh ground black pepper on top
SUGGESTIONS
- Tomato soup is so perfect on a cold day, this one is especially lovely with a nice hot crusty grilled cheese to dip in it.
- Sprinkle some extra basil or shred some parmesan cheese as a garnish
