This creamy polenta recipe is a comforting dish that combines polenta with butter and half and half, resulting in a rich and smooth texture perfect for serving alongside various meals.
INGREDIENTS

Polenta | 1 cup | |
Water | 4 cup | or chicken stock |
Salt | 1 1/2 tsp | |
Butter | 1 tbsp | |
Half and Half | 1 tbsp | optional |
Olive Oil | 1 tbsp | extra virgin |
PREPARATION
Boil the water
(or stock for a more flavorful polenta) and the salt. Add the polenta. Cook 20 minutes while stirring frequently. Make sure to scrape to the bottom of the pot when you stir. After 20 minutes add the half and half if using, the olive oil, and 4 TB water. Continue cooking and stirring for an additional 10 minutes. Turn off the heat and leave covered until you are ready to serve.
