Description
This Coriander Roasted Carrots recipe features tender, flavorful carrots seasoned with a blend of coconut sugar and spices, finished with a splash of lemon for a delightful side dish.
INGREDIENTS

Carrot | 2 lbs | rainbow if available |
Olive Oil | 3 tbsp | |
Salt | ||
Coconut Sugar | 2 tbsp | |
Coriander | 2 tsp | seeds |
Pepper | 1/2 tsp | freshly cracked |
Lemon Juice | 2 1/2 tbsp | |
Parsley | fresh, or mint to garnish, optional |
PREPARATION
- Scrub carrots & slice in half across, then slice in half lengthwise so you’re left with wedges. Toss wedges with olive oil & salt.
- In a bowl, mix coconut sugar, coriander seeds, and pepper.
- Coat carrots with spice mixture and spread onto a baking sheet in a single layer.
- Cover with foil & roast at 425 °F (218 °C) for 30 minutes.
- Remove foil and roast an additional 15-25 minutes, until fork tender.
- Squeeze lemon over carrots & enjoy!
