This Chicken Thighs with Apples & Onions recipe combines savory chicken with sweet apples and caramelized onions, creating a deliciously balanced dish that's perfect for a comforting meal.
INGREDIENTS

Chicken Thighs | 4 4/5 | bone-in, skin-on |
Yellow Onion | 3 1/5 | small, quartered |
Apples | 3 1/5 | medium, cored and quartered |
Arugula | 2/5 lb | washed and spun dry |
Olive Oil | 3 1/5 tbsp | |
Balsamic Vinegar | 1 3/5 tbsp | |
Salt | 2/5 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Season chicken thighs w/ salt & pepper on all sides. Heat 2 TB olive oil in a skillet with a cover. Arrange chicken thighs skin-side down and brown on medium-high heat for about 20 minutes without turning over or moving.
- Reduce heat to low and cover, cooking for another 20 minutes or until done all the way through, without turning over or moving. Remove chicken from pan with spatula and set aside.
- Add remaining 2 TB olive oil to the skillet and add apples and onions. Cook on medium heat for about 10 minutes until cut sides are browned.
- Cover and reduce heat to low again, for about 15 more minutes, until apples are tender.
- Spread a handful of arugula on each plate, then add chicken, then apples & onions.
- Drizzle with balsamic vinegar.
SUGGESTIONS
- Cooking the chicken with the skin on keeps it moist, but you can remove upon serving.
