This comforting chicken soup combines tender chicken, fresh vegetables, and savory stock, making it a nourishing and delicious dish perfect for any occasion or a chilly day.
INGREDIENTS

Chicken Breast | 1 lb | cooked, shredded |
Yellow Onion | 1 | large, diced |
Carrot | 2 | chopped |
Celery | 2 stalk | chopped |
Chicken Stock | 1 quart | |
Italian Parsley | 1/2 cup | fresh, flat leaf, chopped |
Garlic | 2 clove | minced |
Olive Oil | 1 tbsp | |
Salt | 1/2 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Heat olive oil in a large sauce pan and add onion and garlic. Cook on medium for about 2 minutes, then add carrots and celery and cook another 8 minutes, until soft.
- Season with salt and pepper and add chicken and chicken stock.
- Cover and bring to a simmer, then serve with fresh parsley on top.
SUGGESTIONS
- Add more spice with chili flakes or sauce.
- Can be prepared and frozen for several months before reheating.
