These Chicken & Pepper Fajita Wraps are a delightful blend of sautéed chicken, vibrant bell peppers, and onions, all wrapped in crisp butter lettuce for a fresh and healthy meal.
INGREDIENTS

Butter Lettuce | 1 3/5 head | |
Garlic | 3 1/5 clove | minced |
Chili Powder | 2/5 tsp | |
Olive Oil | 1 3/5 tbsp | |
Salt | 2/5 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Slice chicken into thin strips, about 1/2 inch wide and 3 inches long.
- Heat half of the olive oil in a cast iron or a wide, heavy-bottomed saucepan and add chicken.
- Season with salt and pepper and chili powder and stir periodically while cooking on medium high heat for about 15 minutes, until done all the way through and slightly browned on the outside.
- Scoop out with slotted spoon and set aside.
- Add remaining olive oil to the pan and add onions and garlic.
- Stir and soften for about 4 minutes, then add the bell peppers.
- Continue stirring for about 10 minutes, until tender and slightly browned.
- Combine with chicken and toss together.
- Remove butter lettuce leaves from the heads and wash and dry gently to keep whole.
- Scoop chicken with peppers & onions into lettuce leaves and garnish with your preferred condiments.
SUGGESTIONS
- Fresh chopped tomato, avocado and cilantro make perfect condiments.
- Add more spice with chili-based hot sauces.
