Description
This Cheater Porchetta with Roasted Apple recipe features tender pork wrapped in crispy bacon, infused with garlic and herbs, and served on a bed of sweet roasted apples for a delightful flavor combination.
INGREDIENTS

Whole Pork Tenderloins | 2 | a little over a pound each |

PREPARATION
- Preheat oven to 375 °F (190 °C).
- Place bacon in a single layer on a baking sheet & cook for 10 minutes. You want it to render some fat but remain soft and pliable.
- Leaving the garlic bulb intact, skin and all, slice the top off so that each clove is slightly exposed. Place on small sheet of aluminum foil, drizzle with olive oil, and close aluminum to make a pouch.
- Bake for 45 minutes, until the garlic cloves can squeeze out of the bulb like butter. Once the garlic is finished roasting, raise the oven temperature to 425 °F (218 °C).
- Meanwhile, generously season the tenderloins with salt, freshly cracked pepper & lemon zest.
- Slice apples thinly. Using the same baking sheet as the bacon, lay the sliced apples out in a pile.
- Finely chop rosemary & thyme, rub all over tenderloins, squeeze roasted garlic over the tenderloins, then wrap in the par-cooked bacon.
- Place the tenderloins on the pile of apples & roast for 30 minutes.
- Remove from oven, tent with aluminum foil & let rest for 10-15 minutes before slicing.
