Description
This Chard & Eggs recipe features sautéed Swiss chard topped with perfectly cooked eggs, creating a nutritious and delicious dish ideal for breakfast or brunch, serving four people.
INGREDIENTS
Serves 4 people
Ingredient | Quantity | Notes |
Swiss Chard | 2 bunch | rough chopped |
Yellow Onion | 2 | small, chopped |
Egg | 8 | |
Olive Oil | 4 tbsp | |
Salt | 1 tsp | or to taste |
Pepper | several grinds |
PREPARATION
- Heat half of the olive oil in a cast iron or a wide, heavy-bottomed saucepan and add onion.
- Saute for about 5 minutes, stirring occasionally, until softened, then add swiss chard.
- Toss continuously so that all of the leaves wilt evenly, then remove from heat.
- Cook your eggs however you like them in the remaining olive oil, then serve on top of the swiss chard and season with salt and pepper.
SUGGESTIONS
- In the pictures for this recipe, I’ve steamed the eggs in a very simple poaching pan: essentially small nonstick cups that sit above some boiling water. This method creates firm whites and runny yolks.
- Fried or scrambled eggs go well with the chard “nest” too.
